This wine was 100% barrel fermented in French oak. 50% of the wine was fermented in three or four-yearold wood, 17% in year-old, 17% in two-year-old, and 17% in new wood. This was done to add complexity to the wine, while preserving the fruit intensity. Aroma and Palate: The wine is straw in colour. The nose is elegant and slightly toasty with aromas of stone fruit and pineapple. The palate is rich and creamy, full bodied and with great length and a crisp acidity. Cellaring and Food Matching: This wine can be enjoyed from release, with its vibrant fruit expression. It will also cellar succesfully over the next three years. With a textural and creamy palate, this wine will be a perfect match for dishes such as grilled crayfish with garlic lime butter sauce, grilled squid with lemon pepper, pumpkin risotto and a variety of cheeses such as Brie, Gruyere, and Provolone.
